Total Time: 40 min

Cook: 2

Ingredients

Churros:
1 cup water
1/2 cup butter or margarine
1/4 teaspoon salt
1 cup all-purpose flour
3 eggs, beaten
Vegetable oil, for frying
1/4 cup sugar
1/4 teaspoon ground cinnamon, optional
Chocolate for dunking:
1 tablespoon cornstarch
2 cups milk
4 ounces dark chocolate, chopped
1/4 cup sugar
Directions
To make the churro dough: Combine 1 cup of water with the butter or margarine and the salt in a saucepan and bring to a boil over high heat. Using a wooden spoon, stir in flour. Reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Remove the dough from the heat and, while stirring constantly, gradually beat theeggs into the dough.
To make the chocolate for dunking: In a small bowl, dissolve the cornstarch in 1 cup of milk and reserve. Combine the chocolate with the remaining cup of milk in a saucepan. Stirring constantly, melt the chocolate over medium-low heat. Whisk the sugar and the dissolved cornstarch into the melted chocolate mixture. Reduce the heat to low and cook, whisking constantly, until the chocolate is thickened, about 5 minutes. (Add extra cornstarch if it doesn't start to thicken after 5 minutes.) Remove the pan from the heat and whisk until smooth then reserve in a warm place.

Hot Fudge Sundae Oreo Brownies

Hot Fudge Sundae Oreo Brownies

Oreo-Stuffed Brownies
INGREDIENTS:
  • 1 box Brownie Mix
  • eggs & oil (as called for by the brownie mix)
  • 1 heaping half cup (6 oz) Cookies & Cream ice cream
  • 1/4 Cup hot fudge topping (chilled or room temp)
  • *(optional) 1/4 cup of water – (I used this to thin out the mix, as it was super thick, & it still made for great results.)
  1. Preheat oven & grease baking dish (size, as called for on brownie mix box) Combine brownie mix, eggs, and oil as directed on the back of the box.
  2. Add ice cream and hot fudge to the brownie batter and stir to combine. *This is where I added the optional 1/4 cup of water, as the mix was too thick to pour.
  3. Use your own judgement on the mix’s consistency & proceed accordingly!*
  4. Pour half of the brownie batter into the baking dish, layer with Oreos, then top with remaining batter. Bake for 40-50 minutes or as directed on the back of the box.
NOTES: I used a Family Size Brownie Mix, which called for a 13″x19″ baking dish. I’m guessing that the larger mix equated to the extra thick batter. So, if going w/ the larger mix, be sure to add the additional 1/4 cup of water!

Mini S'mores Cookies

Cook Time: 6-8 minutes
These Mini S'mores Cookies are made with graham cracker crumbs, mini chocolate chips, Mallow Bits, and Hershey's Milk Chocolate Candy Bars. They are almost too cute to eat!

1 cup graham cracker crumbs
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/2 cup brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup mini chocolate chips
1/2 cup Jet-Puffed Vanilla Mallow Bits
2 regular size (1.55 oz) Hershey's Milk Chocolate Candy Bars
Extra graham cracker pieces and mallow bits (optional)

directions:

1. Preheat the oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.
2. In a large bowl, whisk together graham cracker crumbs, flour, baking soda, and salt. Set aside.
3. In the bowl of a stand mixer, beat the butter and sugars together until creamy and smooth, about 3 minutes. Add in the egg and vanilla extract and mix until combined. Slowly add the dry ingredients and mix until just combined.
4. Stir in the Mallow Bits and mini chocolate chips. Roll a teaspoon of cookie dough into a ball. Press half of a Hershey's chocolate square on top of the cookie and gently press down. I stuck in a few extra pieces of graham crackers and Mallow Bits onto the top of the dough for looks, but you can skip this step if you wish. Continue making all of the cookies.
5. Place the cookies on the prepared baking sheet, about 1-inch apart. Bake for 6-8 minutes, or until cookies are set. Cool on the baking sheet for 2 minutes and transfer to a wire cooling rack.
