SEAFOOD TOM YAM SOUP


Preparations : 15 minutes
Cook : 10 minutes
Serves : 4

Ingredients :

1 litre water
2 stalks lemon grass, sliced
8 chilli padi, crushed
8 medium-size prawns, trimmed
2 lime leaves
2 stalks coriander leaves, chopped
50g galangal or lengkuas, sliced
100g cuttlefish, sliced
4 green mussels, washed clean
2 knorr tom yam cubes
1-2 tbsps lime juice (optional)

Method:

1- Bring water to boil. Add Knorr tom yam cubes, lemongrass, galangal and chilli. Turn fire to low and bring to slow simmer.
2- Add prawns, cuttlefish and mussels. Cook for 3 minutes. Add lime leaves and simmer for another minute.
3- Just before serving, taste the soup. Add lime juice if desired. Garnish with coriander and chopped red chillies.
