TOM YAM CHICKEN SOUP
Preparation : 10 minutes
Cook : 10 minutes
Serves : 4
4 cups water
2 stalks lemongrass, sliced lengthwise(serai)
50g galangal, sliced(lengkuas)
6 chilli padi
2 chicken thighs, cut into 3 cm pieces
2 lime leaves(kafir leaves/daun limau purut)
2 tbsps lime juice
1 stalk coriander leaves chopped( plus the roots)
2 tom yam cubes
1- Bring water to boil.Add lemongrass, galangal and chilli
2- Add tom yam cubes and chickens. Boil till chicken is cooked about 5-10 minutes. Add lime leaves.
3- just before serving, add lime juice and garnish with coriander leaves.
Tips: tom yam cubes are milder in flavour than tom yam paste. If you prefer a spicier tom yam soup, substitute cubes with 2 tbsps of tom yam paste.
