CHICKEN MADURA

Ingredients:
1 whole chicken cut into 8 or 12 pcs, fried 3/4 cooked & put aside
 
Blendered Ingredients:
1 cup of dried chillies
6 shallots/ 1 onion
3 cloves of garlic

Other Ingredients:
6 cloves garlic - sliced
6 lime juice ( limau kesturi/limau sambal)
3 Kafir leaves(daun limau purut)
2 packet of fried shallots (small packet est.@S2.50)
sugar and salt to taste

Method:
1- On hot pan, sauteed sliced garlics( ensure not overfried or burnt), blendered ingredients and  kafir leaves till fragrant.
2- Add in the lime juices ,sugar and salt ,  fried chicken and fried shallots mix well , if too dry can add in a little water, let it simmer for 5 mins and served with white rice or any flavoured rice; corn rice or 'nasi minyak'.

This recipe shared fm my aunt, tried many times, it is simple and fast to cook, its slighlty sourish,sweet and spicy.
