MUMSDISHES SAMBAL UNDANG/SPICY PRAWNS


BASIC CHILLY PASTE :

Blendered Ingredients:

1 handful dried chillies (soaked and deseeded, drained & put aside)
2 fresh red chillies
2 medium onions
4 cloves garlic
2 stalks lemongrass
2cm ginger
2cm fresh tumeric
3 pcs candlenuts
2 cm belacan/prawn paste

Other Ingredients :
1kg medium size prawns( cut off part of the heads, do not discard the shell)
2 medium onions( cut into rings-ptg bulat2)
2 tblspn chilly sauce
1 tblspn coconut milk(optional, only for flavour)
2 tblspn sugar
1 tblspn soya bean paste
juice of 2 lime  (limau kesturi/sambal)
salt to taste

Method:

1) With oil on medium heat, fry the blendered ingredients till fragrant

2) Add in the sliced onions till soften, add in sugar, chilly sauce, soya bean paste, coconut milk, lime juice, sugar and mix well

3) Lastly add in prawns and salt to taste, let it simmer for 5 mins or till prawns is done/cooked and served with white rice, biryani rice or corn rice. Enjoy!

P.S. I've just realized that most of my recipes are very spicy...hehe...probably I should changed my blog title to SPICY SIZZLING FOOD FOR LOVE! Hmmmm...(in deep thought)not a bad idea I supposed,hihi...:D
