
- 2 1/4 cups golden raisins
- 1 cup glace cherries - halved
- 1 cup glace pineapple - chopped
- 150 g dark chocolate - chopped
- 185 g butter - softened
- 3/4 cup brown sugar - firmly packed
- 1 cup sweet sherry(can replace with orange juice)
- 4 large eggs - lightly beaten
- 155 g semi-sweet chocolate chips
- 1 3/4 cups all-purpose flour
- 1/4 cup self-raising flour
- 1/2 tsp baking soda
Directions

- Grease a 19 cm square baking pan. Line base & sides with double thickness wax paper, bringing paper 2 cm above the top edge of pan
- Pre-heat oven to 300 degrees
- Sift flours & baking soda - set aside
- Combine fruit, dark chocolate, butter, sugar & orange juice in a large saucepan
- Stir constantly over medium/low heat, without boilng until chocolate & butter are melted
- Bring to boil, then reduce heat & simmer uncovered for 10 mins
- Transfer to large bowl & allow to cool to room temp.
- Stir eggs into fruit mixture, then chocolate chips & then flour mixture
- Spread evenly in prepared pan
- Bake for about 2 hrs. Test with toothpick in center
- Remove from oven
- Cover tightly with tin foil & cool in pan
- Cake will keep for up to 1 month in an airtight container or in the freezer for 3 months
