Another Meringues-Party Meringues

Ini ada lagi satu resipi yang mungkin boleh anda cuba – Party Meringues. Lebihan putih telur dari membuat kek lapis boleh anda gunakan untuk resipi berikut.

Anda juga boleh buat meringues menggunakan resipi dibawah dan pipekan menggunakan nozzle ikut daya kreativiti dan selepas membakar celupkan setengah meringue kedalam coklat cair dan sejukkan atas wire rack.

PARTY MERINGUES
Untuk 36 meringue

Bahan-bahannya
4 biji putih telur
1 cawan gula kaster
60 gram hirisan badam
jeli, smarties dll untuk hiasan

Cara-caranya
Pukul putih telur sehingga kaku. Masukkan gula 1 sudu besar dalam satu masa dan pukul lagi pada kelajuan sederhana selama 15 minit atau sehingga adunan menjadi pekat. Griskan loyang pembakar dan taburkan dengan tepung jagung. Buang lebihan tepung jagung dari loyang.

Sendukkan 1/3 adunan meringue ke dalam beg piping dengan muncung bintang dan pipekan bentuk landak diatas loyang. Sendukkan 1/3 bahagian adunan lagi dan gunakan muncung nozzle plain dan adunan dipipekan berbentuk tikus. Gunakan nozzle yang sama untuk lebihan adunan dan pipekan bentuk siput. Kemudian hiaskan meringue dengan gaya creativiti anda

MOCHA MERINGUES

To use them up, I usually make simple white or brown sugar meringues and fill them with fresh fruit and softly whipped cream, but today I felt like something different, so a batch of mocha meringues was whipped up. The little meringue puffs are flavoured with coffee and cocoa, then sandwiched together with a smear of melted dark chocolate. Yum!

Mocha Meringues

(adapted from a recipe in delicious. magazine, February 2008)

3 large egg whites

180g caster sugar

1 teaspoon cornflour

½ teaspoon white vinegar

½ teaspoon vanilla extract

2 tablespoons cocoa powder

3 teaspoons ground coffee

80g dark chocolate

  1. Preheat the oven to 130°C. Line two baking trays with non-stick baking paper.
  2. In a large bowl, whisk the egg whites until soft peaks form. While continuously whisking, add the sugar one tablespoon at a time until stiff and satiny shiny. Whisk in the vanilla, cornflour, white vinegar, cocoa powder and two teaspoons of the coffee until combined.
  3. Using a piping bag and a 1cm plain nozzle, pipe 60 small blobs onto the prepared trays around 2.5cm in diameter and 4cm apart.
  4. Bake for 25 minutes. Turn the oven off and with the door slightly ajar, allow the meringues to cool completely.
  5. Melt the chocolate and the remaining coffee in a bowl set over saucepan of simmering water. Allow to cool, then use to sandwich the meringue bases together.

Makes 30 and will keep for 2 days in an airtight container.

Ingredients

  • 4 egg whites
  • 1/2 tsp vanilla essence
  • 1 cup (220g) caster sugar
  • Pink food colouring, just a few drops
  • 1 1/2 cups (255g) Nestle White Melts
  • Coloured sugar crystals or sprinkles, to decorate

Method

  1. Preheat oven to 100°C. Line two baking trays with non-stick baking paper. Use an electric beater to beat the egg whites until soft peaks form. Beat in the vanilla.
  2. Beat in the sugar, 2 tbs at a time, beating well after each addition until all the sugar has dissolved and the mixture is thick and glossy. Rub a small amount of the mixture between your thumb and forefinger - the mixture should not feel grainy.
  3. Fold a few drops of pink food colouring through the mixture. Place heaped dessertspoonfuls of the mixture onto the trays. Bake for 90 minutes. Turn the oven off and leave to cool completely in the oven.
  4. Melt the chocolate according to packet instructions. Dip the tops of the meringues into the chocolate. Sprinkle with the sugar crystals or sprinkles to decorate. Set the meringues aside to set.
