|3 medium bananas, ripe if possible (approx. 400g / 14oz)|
|300g / 10oz self-raising flour|

WHAT SPECIAL KITCHEN EQUIPMENT?You will need the following for the banana cake:
1 large bowl to mix the ingredients
900g loaf tin (see picture below)
Small amount of greaseproof baking paper.
The butter must be soft. The best way to achieve this is to measure out the butter an hour or so before it is needed and leave it at room temperature. If this is not possible, break up the butter with a fork and beat it for a minute or so. If all else fails, put it in a bowl and float the bowl in warm water.
Turn the oven on, setting it to 180°C / 350°F / Gas Mark 4.
Next, grease the loaf tin with margarine or butter, and line the tin with greaseproof baking paper. It's not essential to cover 100% of the tin but make sure that it lays as flat as possible on the inside of the tin.
|Stir in the bananas and chopped walnuts or sultanas and mix thoroughly. Add one egg and sift in half of the flour. Mix thoroughly in a figure of eight. Add the remaining flour, egg and lemon juice then mix again in a figure of eight.Now the magic touch! Add the two tablespoons of olive or vegetable oil and mix thoroughly again in a figure of eight with a fork. The oil will keep the cake moist.|
Some people have commented that this banana cake takes 1 hour 15 minutes to bake so don't be concerned if it's the same for you. Different ovens and slightly different ingredients are probably the cause of this. Just keep checking every five or ten minutes. When you remove the cake out from the oven, take it out of the tin and place it on a wire rack or something similar. This will stop the cake sweating and getting damp - it really does make a difference.
Allow the cake an hour or so to cool down before icing it.
Banana Cake Recipe
This recipe makes a moist, dense banana cake with a smooth cream cheese icing. The cake doesn't rise much so it has a nice flat top for presentation. We served the cake at room temperature and topped each slice with a little passionfruit pulp.
You will need about 2-3 large bananas for this recipe.
Serves about 10.
We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.
125g butter, softened (if using unsalted butter, add 1/4 teaspoon salt with the flour)
330g (1 1/2 cups) sugar
280g (1 very slightly rounded cup) very ripe, mashed banana
1/2 teaspoon vanilla extract (1 teaspoon natural vanilla essence)
2 large eggs (we use eggs with a minimum weight of 59g)
100ml (1/3 cup + 1 tablespoon) buttermilk
225g (1 1/2 cups) self-raising flour
1/2 teaspoon bicarbonate of soda
Preheat oven to 160 degrees Celsius fan-forced. If you don't have a fan-forced oven, preheat the oven to 180 degrees Celsius.
Grease the side and base of a 22cm diameter (inside top measurement) round cake pan. We use a springform pan for easy removal of the cake. Line base of the pan with non-stick baking paper.
Place butter, sugar, banana, vanilla and eggs in a food processor.
Process for about 2 minutes. Scrape down sides of processor. Add buttermilk and pulse to combine. © exclusivelyfood.com.au
Sift flour, salt (if using) and bicarbonate of soda together into a large bowl. Add flour mixture to food processor and process until just combined.
Pour batter into prepared pan.
Bake for about 50-60 minutes, or until a skewer or knife inserted in the centre of the cake comes out clean.
Leave cake to cool on a wire rack.
Spread cooled cake with cream cheese icing. Store cake in an airtight container in the refrigerator.
Cream Cheese Icing
90g cream cheese, softened
45g butter, softened
210g (1 2/3 cups) icing sugar
1 1/2 teaspoons lemon juice
Beat cream cheese and butter with an electric mixer until creamy. Add sifted icing sugar and beat until smooth. Add lemon juice and beat to combine. Spread icing over top and sides of cooled cake.

This rich cake is very easy to make, and has a wonderful velvety texture because of the mashed banana.

Total Time: 85 minutes
- 3 cups flour
- 2-1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3 ripe bananas, mashed
- 1 cup butter, softened
- 1/4 cup heavy cream
- 1-1/2 cups sugar
- 4 eggs
- 1 tsp. vanilla
- 12-oz. pkg. chocolate chips
Preheat oven to 325 degrees F. Generously grease and flour a 12 cup bundt pan; set aside. In large bowl combine all ingredients except chocolate chips. Beat on medium speed for 2 minutes. By hand, stir in chocolate chips. Pour into prepared pan. Bake at 325 degrees F for 65-75 minutes or until cake is firm and set and begins to pull away from sides of pan. Immediately set pan onto a dishtowel that has been soaked in water and gently wrung out. Let pan sit for 5 minutes, then turn out onto serving plate (this will make the cake come out of the pan without sticking). Cool completely before serving. 16 servings
Peanut Butter-Cream Cheese Icing
- ½ cup creamy peanut butter
- 1 (8 oz) package cream cheese, softened
- 1 ¼ cups confectioners’ sugar
- ½ tsp vanilla extract
Cream the peanut butter and the cream cheese in a mixer with the paddle attachment, scraping the sides once or twice, until light and fluffy. Beat in the sugar gradually. When completely incorporated, add the vanilla.

½ cup margarine softened, and ¼ cups brown sugar, and also take two eggs. 2 squares unsweetened chocolate, melted and 2 cups of flour. ½ tb spoon backing soda, and ¼ salt, 1 teaspoon baking powder. 1 1/2 cups mashed ripe bananas, ½ teaspoon vanilla.
Cream margarine and brown sugar until light and fluffy. Add eggs one at a time. Beat thoroughly after each. Stir in the cooled melted chocolate. Sift dry ingredients together and add to the batter alternately with the mashed bananas; stir in vanilla Pour into 2 greased and floured 9-inch layer cake pans.
