Recipe~ Tropical Desserts ~ Devagi Sanmugam
1Tbsp agar2 powder
1/2 tsp pandan paste + 1/2 tsp green food colouring
1/2 tsp vanilla essence
1/2 tsp cochineal food colouring
1/2 tsp indigo or violet food colouring
Jam Topping (Make only after you prepare the cheesecake)
200g apricot jam
1 tspn lemin juice
1 Tbspn caster sugar
1 Tbspn gelatin dissolved in 125ml of hot water
1 1/2 tspn gelatin dissolved in 125 ml of hot water
250ml plain cream cheese
125g caster sugar
3 Tbspn lemon juice
1 tspn grated lemon rind
3 Tbspn fresh ceream ( I used whip topping)
1 small sponge cake
To prepare the coloured cubes, place all the ingredients except food colourings in a pan & bring to boil for 8 minutes or until sugar & agar2 powder has dissolved completely.
Pour agar2 mixture into 4 shallow containers with a few drops of different food colourings, leaving the 4th portion plain. Leave aside to set, Then cut the agar2 into cubes and refrigerate until needed.
To prepare the Jam Topping, mix all ingredients together in a bowl to form a smooth jam.
To prepare the cheesecake, blend all ingradients except sponge cake & coloured cubes, in ablender until smooth. Pour into a bowl & add the coloured cubes. ix well & set aside.
Cut the sponge cake to make a round base for the 8" round cake tin. Pur the prepared cheesecake mixture on the sponge cake & refrigerate till it sets. Pour the jam topping over it & refrigerate.
